Cheesy Potato Pancakes

Cheesy Potato Pancakes

Ingredients:

  • 2 slices of bacon

  • 2 cups chopped onion

  • 1 cup thinly sliced leek

  • 3 garlic cloves, chopped

  • 1 ½ pounds shredded peeled baking potato (about 2 large potatoes)

  • ⅓ cup (1 ½ oz) shredded Apple Smoked Cheddar cheese

  • ¾ tsp salt

  • ½ tsp black pepper

  • 2 large eggs

  • 1 tbsp butter

  • ¼ cup reduced-fat sour cream

Directions:

  1. Preheat oven to 350°F

  2. Cook bacon until crisp. Remove bacon from pan and set aside.

  3. Add onion to drippings in the pan, and cook for 5 minutes on low heat, stirring occasionally.

  4. Add leek and garlic; cook for 2 minutes, stirring frequently.

  5. Pour contents of the pan into a medium bowl, add grated potato, Apple Smoked Cheddar cheese, salt, black pepper, and eggs, stir well.

  6. Divide the potato mixture into 8 equal portions, and shape each portion into a ½ inch thick patty. Squeeze moisture from each patty.

  7. Melt butter over medium-high heat. Add patties to pan; sauté 2 minutes on each side.

  8. Transfer patties to a baking sheet; bake at 350°F for 15 minutes or until set.

  9. Crumble the bacon and top the patties with the bacon and sour cream. Serve.
